Texas Caviar

This is super good, it's already half gone as you can see. I make this and Trevor and I eat it all week long. It's good with chips or all by itself and its a good excuse to eat healthy food. This is something I came across the past couple of months, Alecia also makes it with avocado in it, that makes it even better. It's not a tradition I just wanted to share it. Love Jill Page (related to: Nicki White Shurtleff, Phyllis Searle White)

2 15 oz cans of Black Beans (I substitute one can for a can of black eye peas)
1/2 cup of celery chopped
3/4 cup of green onion chopped
2 cups of tomatoes chopped
1 green pepper chopped
1/4 cup cilantro minced
1/2 a red pepper if you have it
1 avocado if you choose
MIX
whisk together:
1/3 cup redwine vinegar
1/3 cup olive oil ( I do less than that)
2 tsp tabasco sauce
1/2 tsp cumin
1&1/2 tsp salt
1/2 tsp black pepper
ADD and MIX
Stir in about one cup of cooled rice after -brown basmati rice is good
